SUGAR BISCUITS
4 oz butter or firm margarine
4 oz caster sugar
1 tspn lemon (or orange) rind
1 egg, separated
¼ tspn salt
6 oz plain flour
1 oz semolina
Caster sugar for sprinkling
Lightly cream together butter, sugar and lemon rind. Work in egg yolk and salt until blended. Add flour and semolina and combine to make a firm paste. If a little soft, wrap in cling film and leave in fridge for a short while.
Roll out thinly on a floured board and cut into shapes. Place on a lightly greased baking tray. Whisk egg white lightly to liquefy it and brush tops of biscuits and dredge with caster sugar.
Bake near top of oven – Gas Mark 4, 350 deg. F, for 12-15 mins until pale golden. Leave on tray 1 or 2 mins to crisp, then to cooling rack.
Oh these sound lovely. I’ll have to give this recipe a try.
