Chocolate Courgette cake

This is scrummy - lovely and moist. I made mine with mostly plain chocolate (as I'd gotten very low on cooking choc) so it wasn't too sweet and believe it or not, OH even likes it. I haven't told him there are courgettes in it or he would then never touch it again. . . . Sigh. I have, ahem, sent middle daughter off to work with a slice today - she's another one who wouldn't touch it if she thought it had "things" in!!!

175g/6 oz plain chocolate
2 large eggs
175ml/6 fl oz vegetable oil
200g/7 oz S-R Flour
1/2 tspn salt
115g/4 oz caster sugar
225g/8 oz peeled weight courgettes, grated
55g/2 oz walnuts, chopped

Preheat the oven to 180 deg. C/350 deg. F/Gas 4. Grease and flour a 20cm/8 inch round cake tin.

Melt the chocolate in a bowl set over a pan of barely simmering water or in a microwave and set aside.

In a large bowl, whisk together the eggs and oil.

Measure the flour, salt and sugar into another bowl, and mix together. Gradually add this mixture to the whisked egg and oil, and beat well together.

Stir in the melted chocolate, then the grated courgettes and nuts (I left out the nuts). Mix well and pour into the prepared cake tin. bake for 1 hour or until the cake is well risen, and is firm and springy to the touch in the centre. Allow to cool in the tin for 10 mins before turning out on to a wire rack.

This is even better the next day - if it lasts that long!

  1. Looks absolutely scrummy BB. If it does come to admitting just say its apple - more acceptable? The bonus is the courgette will keep the cake lovely and moist. Definitely going to have a go at this one.

Hope you are having a better day and that the sun really starts to shine in your quarter after a few misty days.

    Take care

  2. This looks and sounds so delicious--the "zucchini" as we call it, makes baked things so moist. Ours were anihilated by the heat and the squash vine borers before I had a chance to make but one loaf of zucchini bread. J. is also one of those with an unreasonable disllike of the "things"--I have to be very cagey about including them in any dish.

  3. That looks so good! Is plain chocolate just "cocoa" or the squares of chocolate? And I had to google "courgette"! It's Zucchini! I love zucchini bread and will definitely have to try this as well.

  4. Southern Heart - it is a bar of chocolate - I used my husband's 81% cocoa bar - he hates sweet chocolate! On day 2, it turns wonderfully fudgy . . .

MM - What a shame about your crop. I could keep you going all winter I think!

Pattypan - You could make this with 8 oz grated apple too. I have a similar recipe for chocolate apple cake, but it calls for cocoa powder and not melted chocolate.

  5. Oh I must try this - something to do with all those languishing courgettes which RQ will not eat!

  6. Hi- I am your newest follower. I plan to make this recipe today. Everything looks so good!
Please come and check out my blog about our farm and life in New York State and follow.

  7. This sounds great and I think I'll try it tomorrow when it's my day to cook! The chocolate apple cake sounds interesting too...

  8. Just been to your blog site Stonehedge - love it.

GC - Will put up the apple cake recipe on my return from Sheffield (away Mon/Tues).

WSC - that cake is SO perfect for hiding the courgettes in!!!
